It used to be that you could use a local butcher to do the slaughtering and processing of an animal. Now, that's pretty much illegal. This has provided a huge barrier to entry to small-scale meat farming operations. In fact, it's probably the single biggest hurdle. <br />Joel Salatin has several sections in his various books on this topic.
